Carrot Cake (Susan's)

  • 1 cup sugar
  • 3/4 cup canola oil (can substitute apple sauce for ½  if you like)
  • 4 eggs
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 2  teaspoons cinnamon
  • 2-3 cups grated carrot
  • 1 1/2 cups chopped apple
  • 1 cup raisins
  • 3/4 cup pecans or walnuts

Directions:

Blend sugar, oil (apple sauce) and eggs until slightly thickened.  Sift dry ingredients and combine with egg mixture.   Add carrots, raisins, apple, nuts and blend.  Grease and flour a 9 x 13 x 2 “ pan.  Bake for 35 – 40 minutes at 350°

 

 

Cream Cheese Frosting

 

  • 8 oz cream cheese
  • 1/4  cup butter
  • 1/2 cup icing sugar
  • 1/4 teaspoon vanilla

Directions:

Beat cheese and butter until fluffy.  Beat in icing sugar and vanilla.  Smooth onto slightly warm cake.

Serves 15 to 20
