Low Fat Carrot Zucchini Muffins

  • 1 1/2 cup whole wheat flour
  • 1 1/2 cup all purpose flour
  • 1 1/4 cup white sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 cup applesauce
  • 4 eggs
  • 1 1/2 cup grated carrots
  • 1 1/2 cup grated zucchini
  • 1 cup walnuts or raisins

In a large bowl; mix flours, sugar, baking soda, baking powder and cinnamon together. Stir in applesauce and eggs. Mix in carrots, zucchini and walnuts or raisins. If mixture looks a little too thick I add 1/4 cup (50 ml) water.

Bake in preheated 350 F (180 C) oven for 20 to 25 minutes.
