Carrot Spread

  • 8 oz cream cheese, softened
  • 4 small carrots, grated
  • 1 cup ground pecans
  • 1 tbsp onion, finely chopped
  • 1/4 cup mayonnaise
  • salt and pepper to taste

Directions

In a medium bowl, thoroughly blend cream cheese, carrots, pecans, onion and mayonnaise.  Season with salt and pepper.  Cover and refridgerate until ready to use.  Serve with crackers.

Serves 10
