Thai Carrot Salad

  • 4 carrots, shredded
  • 2 chile peppers, chopped (wear gloves)
  • 4 scallions, thinly sliced
  • 2 tbsp. fresh lime juice
  • 2 tsp. light brown sugar, firmly packed
  • 2 tsp. soy sauce
  • 2 tbsp. dry roasted peanuts, coarsely chopped

In a large bowl, combine all ingredients except peanuts.  Refrigerate for at least one hour, covered, until flavours are blended.  Sprinkle with peanuts.
