The only thing this has to do with carrots is that you could use carrot and celery sticks instead of crackers for this amazing dip - it is definitely not for those on a diet but it is very yummy!
Chop and cook til crispy ~ wrap in paper towel to drain all the fat you can off:
8 strips of bacon until crispy - I have been buying Mitchell's thick sliced bacon at Thrifty Foods and it is the best!
In a mixing bowl, combine and blend until smooth:
8 oz. cream cheese
1/2 cup mayonnaise
2 tsp. dijon mustard
To this, add:
the cooled bacon 'bits' you made above
3 green onions, chopped
1 1/2 cups swiss cheese, grated
Scoop it all into an ovenproof dish, bake at 400 degrees for 18 minutes.
